Heat vegetable oil in a wok or large pan over high heat.
Add diced carrot and cook 2 minutes. Add edamame and cook 1 minute more.
Add cauliflower rice. Stir-fry 3–4 minutes until slightly golden.
Push everything to the side. Crack eggs into the pan and scramble quickly.
Mix eggs into the rice. Add soy sauce and sesame oil. Toss well.
Top with sliced spring onions and serve immediately.
